Asado - Cooking style with
Spanish and Chinese influences. Pork is simmered in sauces and spices then thinly sliced. Binagoongang Baboy - Boneless Pork chunks simmered in Bagoong (shrimp paste). Bopis - Pork entrails simmered in vinegar and spices. Crispy Pata - Pork hocks deep-fried to a crisp golden brown served with a dipping sauce and Lechon Sarsa. Embotido - Meatloaf made from Pork, Ham, Vegetables, and Spices wrapped in foil to form a plump sausage-shaped roll. Served with gravy on the side. Higado - Pork meat and liver cut into strips simmered in Tomato sauce, Garbanzos (chick peas) and Onions. Longanisa - Mild, sweet, pre-cooked pork sausage, great for dinners, sandwiches, quick & easy snack, barbeques and hor d' oeuvres.
